Minced Meat in Hamburg Harbor
In the 19th century, Hamburg, Germany, was recognized as Europe's largest and most bustling port. For the many laborers working in the city, a dish of minced beef steak, designed for quick and easy consumption, became a standard and popular lunch option. This particular preparation of meat was widely referred to as 'Hamburg steak.' Its culinary evolution was also intertwined with the Baltic Sea trade, through which it both influenced and was influenced by the Russian Tartar steak, a similar dish from the region.
An Immigrant Dish Arrives in America
Between 1850 and 1900, a significant wave of German immigration saw approximately five million people move to the United States. Among the cultural elements they brought with them was the Hamburg steak. This dish soon found its way onto American restaurant menus, often listed as 'Hamburg-style steak.' The precise origin of the hamburger as we know it is debated, with several individuals credited as potential inventors. These include Charlie Nagreen from Wisconsin, the brothers Frank and Charles Menches from Ohio, and Louis Lassen from Connecticut. Around 1885, each of these figures independently began selling Hamburg steaks served between slices of bread at their respective street stalls. This innovation, prioritizing mobility and portability, proved to be a pivotal moment, effectively initiating what would become the distinctive American fast-food culture.
The Hanja Character for 'Enclosing'
The Hanja character '包' (bao, pronounced 'po' in Korean), which signifies 'to enclose' or 'to wrap,' is etymologically formed from the radical '勹' (meaning 'to wrap') combined with '巳' (representing a fetus).
